Keep the kids happy at school with a healthy lunch box idea.

Orange Almond Cakes

Healthy unchbox snacksThe reason I like this recipe is there is no white processed flour. They are packed full of protein, but just be cautious of the amount of sugar you put in, alternatively use xylitol.

2 organic oranges
6 eggs
180 g white sugar ( would use much less)
180 g ground almonds
1 tsp baking powder
to serve:

150 g natural yoghurt
toasted flaked almonds

Healthy lunch box ideas, healthy school lunchesPlace the oranges – whole, well-scrubbed, unpeeled - in a saucepan and cover with cold water. Bring to the boil, then simmer covered for one hour, until soft (make sure the water doesn’t boil dry). Drain, cut the oranges in half, and discard any pips. Whiz the oranges to a creamy pulp in a food processor.

Beat the eggs and sugar together until well-mixed. Beat in the orange pulp, then the ground almonds and baking powder. Spoon into a well- greased 12-hole large muffin tin.

Bake on the middle rack for 30 minutes at 180C or until an inserted skewer comes out dry.

Celery Snacks

I used to have these as a kid in my school lunches. Fill the inside of a celery stick with peanut butter, or Phili cream cheese (there are some great flavours now) wrap in aluminum foil and they are a great snack to much on at anytime. Actually I might have one now…
